Man, however, has advanced just exactly in the proportion with which he has mingled his thought with his labor. The sailor, without control of the wind and wave, knowing nothing or very little of the mysterious currents and pulses of the sea, is superstitious. So also is the agriculturist, whose prosperity depends upon something he cannot control.
The scientific agriculturist again will be studying the food supply of the world as a whole, and how it may be increased and distributed and economized. And to the student of law comes the task of rephrasing his intricate and often quite beautiful science in relation to modern conceptions.
This experience as a practical agriculturist, far from discouraging him, qualified him in his own opinion to speak with authority, and he became a devoted missionary of the gospel of agricultural improvement. The enthusiasm with which he admired more successful labourers in the cause, and the indignation with which he regards the sluggish and retrograde, are charming.
The Chinaman, too, in addition to his valuable properties as a keen trader and a man of business, collecting from the natives the products of the country, which he passes on to the European merchant, from whom he obtains the European fabrics and American "notions" to barter with the natives, is also a good agriculturist, whether on a large or small scale; he is muscular and can endure both heat and cold, and so is, at any rate in the tropics, far and away a superior animal to the white labourer, whether for agricultural or mining work, as an artizan, or as a hewer of wood and drawer of water, as a cook, a housemaid or a washerwoman.
If the frost strikes one they have the other; if it happens to strike all in that locality there is a surplus somewhere else, and that surplus is distributed by railways and steamers and by the thousand ways that we have to distribute these things; and as a consequence the agriculturist begins to think and reason, and now for the first time in the history of the world the agriculturist begins to stand upon a level with the mechanic and with the man who has confidence in the laws and facts of nature.
The work was not all done for the agriculture and the agriculturist of England in the last century; it is hardly all done yet; it is doubtful if it will be done so as to close investigation and ripen method in our time. There was room for a corps of fresh workers at the opening of the present century; nor was such a corps lacking.
No means of individual comfort is more certain and no source of national prosperity is so sure. Nothing can compensate a people for a dependence upon others for the bread they eat, and that cheerful abundance on which the happiness of everyone so much depends is to be looked for nowhere with such sure reliance as in the industry of the agriculturist and the bounties of the earth.
That the refuse of the cow-houses might be applied to a profitable purpose, a large farm was added to the concern, though of such land as an amateur agriculturist would never have selected for his experiments. Thus there was a complete system of economy at this distillery: a dairy to convert the draff into milk, and a farm to insure that the soil from the cows might be used upon the spot.
But beyond this there are the sheep in the pens to be attended to as the important time of lambing approaches, and there are the horned cattle in the stalls still fattening, and leaving, as they reach maturity, for the butcher. The arable agriculturist, indeed, has a double weight upon his mind.
The absence of competition necessarily raised the prices obtainable by the British shipper, and this, together with the additional cost of transshipment and delays, attendant upon a broken voyage, fell upon the American agriculturist, whose goods commanded just so much less at their place of origin.
