Take a piece of rennet about three inches square, and wash it in two or three cold waters to get off the salt; wipe it dry, and fasten a string to one corner of it. Have ready in a deep dish or pan, a quart of unskimmed milk that has been warmed but not boiled. Put the rennet into it, leaving the string hanging out over the side, that you may know where to find it.

Pare off the yellow rind of nine large lemons, and steep it for twenty-four hours in a quart of brandy or rum. Then mix with it the juice of the lemons, a pound and a half of loaf-sugar, two grated nutmegs, and a quart of water. Add a quart of rich unskimmed milk, made boiling hot, and strain the whole through a jelly-bag. It will keep several months.

The reason probably was that they were for ever going to the Brindled Cow under pretence of being thirsty but in reality to feast their eyes on Rosamund's lovely face; and since, thirsty or not, she insisted upon their drinking, as long as they stayed, at the rate of a pint of rich unskimmed milk every ten minutes, you will easily understand that it soon became possible to measure the ardour of their affection in pounds avoirdupois.

Mix rapidly into a rather stiff dough with unskimmed milk. The dough should be rolled thin, and cut into small biscuits or strips. All fatty beverages bouillon, unskimmed milk, chocolate, or cacao and all alcoholics, are hurtful; breakfast tea is undoubtedly the best beverage, but, after a little, is advantageously replaced by light white wine diluted with water.

I am plebeian enough to be fond of milk and crackers as a luncheon; but I have just a dash of the patrician in my make-up and prefer the milk unskimmed. Sometimes, I find that the cream has been devoted to other, if not higher, uses and that my crackers must associate perforce with milk of cerulean hue.

One woman sent to borrow a pound of cheese; another half a pound of coffee; and more than once an intimation accompanied the milk-jug, that the milk must be fresh, and unskimmed: on one occasion the messenger refused milk, and said, "Mother only wanted a little cream for her coffee."
