CUCUMBER VINEGAR. Pare and slice fifteen large cucumbers, and put them into a stone jar, with three pints of vinegar, four large onions sliced, two or three shalots, a little garlic, two large spoonfuls of salt, three tea-spoonfuls of pepper, and half a tea-spoonful of cayenne. Keep the vinegar in small bottles, to add to sallad, or to eat with meat.

I have likewise two small gardens, well stocked with oranges, lemons, peaches, figs, grapes, corinths, sallad, and pot-herbs. It is supplied with a draw-well of good water, and there is another in the vestibule of the house, which is cool, large, and magnificent.

The Method which I most approve of for dressing a Sallad, is, after we have duly proportion'd the Herbs, to take two thirds Oil Olive, one third true Vinegar, some hard Eggs cut small, both the Whites and Yolks, a little Salt and some Mustard, all which must be well mix'd and pour'd over the Sallad, having first cut the large Herbs, such as Sallery, Endive, or Cabbage-Lettuce, but none of the small ones: then mix all these well together, that it may be ready just when you want to use it, for the Oil will make it presently soften, and lose its briskness.

There is a Weed, more known to Plowmen than belov'd by them, whose Flowers from their Colour are commonly call'd Blew-bottles, and Corn-weed from their Growing among Corn . These Flowers some Ladies do, upon the account of their Lovely Colour, think worth the being Candied, which when they are, they will long retain so fair a Colour, as makes them a very fine Sallad in the Winter.

The most effectual remedy yet discovered has been a clove of garlic, steeped for a few minutes in warm sallad oil, and put into the ear, rolled up in muslin or fine linen. When the garlic has accomplished its object, and is removed from the ear, it should be replaced with cotton, to prevent the patient taking cold.

The noblesse and burgeois sup on sallad and anchovies, which are eaten on all their meagre days. The fishermen and mariners all along this coast have scarce any other food but dry bread, with a few pickled anchovies; and when the fish is eaten, they rub their crusts with the brine. Nothing can be more delicious than fresh anchovies fried in oil: I prefer them to the smelts of the Thames.

Beet-root, lettuces, raddishes, sallad of all kinds, horse-raddish, samphire, watercresses, celery, endive, and herbs of every description, are extremely plentiful, and to be purchased at reasonable rates. Animal food is to be procured at the following prices: Beef 1s. 3d. per lb.; mutton 1s. 3d. per lb.; pork 1s. per lb.; lamb 1s. 3d. per lb.; kangaroo 8d. per lb.
