Vegetables formed a large part of the meal, the meats being mixed with them to serve as flavoring; for in so hot a climate a vegetable diet is far more healthy than one composed principally of meat. While the meal was proceeding a party of female musicians, seated on the ground in one corner of the room, played and sang.

The chief salad vegetables are celery, lettuce, tomatoes, cucumbers, cabbage, onions and garlic, the two last mentioned being used for flavoring. Dr. Tilden, who has done much to popularize raw vegetable salads, has a favorite, which he calls by his own name. It is equal parts of lettuce, tomatoes and cucumbers, with a small piece of onion.

If, as to this matter, any one doubts me, and has the good luck to camp out long, and to have a variety of books of verse and prose, very soon, if dainty of taste, he will find that the artificial flavoring of some books is unpleasantly felt; but, after all, one does not read very much when living thus outside of houses.

Small groves of nutmegs, cloves, mangoes, citrons, and pepper-trees attract the visitor's attention, together with budding cinnamon and cardamom bushes; nor must we forget to mention the fragrant vanilla-tree, which to the author recalled a delightful experience in far-away southern Mexico, where a mountain side near Oxala was rendered lovely and delicious by the profuse growth of this flavoring product of the tropics.

The most careful study and analysis have shown that almost every known food has some peculiar advantage, such as digestibility, or cheapness, or pleasant taste as flavoring for other more nutritious, but less interesting, foods.

In Packingtown the fertilizer is pure, instead of being a flavoring, and instead of a ton or so spread out on several acres under the open sky, there are hundreds and thousands of tons of it in one building, heaped here and there in haystack piles, covering the floor several inches deep, and filling the air with a choking dust that becomes a blinding sandstorm when the wind stirs.

Real Silver Cake: Wash and cream to a froth a pound of fresh butter, work into it a pound of sifted sugar, and a pound of flour, sifted thrice with a teaspoonful of baking powder. Add flavoring vanilla, lemon or rose water, following it with a wineglass of whiskey. Then fold in the whites of sixteen eggs beaten with a pinch of salt to the stiffest possible froth.

This is suggested because the development of the oils, upon which the flavoring of most of the herbs mainly depends, is best in full sunshine and the plants have more substance than when grown in the shade. As to the kind of soil, Hobson's choice ranks first! It is not necessary to move into the next county just to have an herb garden.

Cork, seal and keep in a cool place. This is especially valuable for use in mincemeat, or for flavoring sauces for nursery puddings. A variant is to add sugar towards the last, enough to make a thinnish syrup, which is of itself a good sauce for simple desserts.
