There'll be no drinking on this island if I can help it. I understand some of you men are planning to put the pulp of the algarobo through a process of fermentation and make chica by the barrel. Well, if I have anything to say about it, you'll do nothing of the sort. I know that stuff. It's got more murder in it than anything I've ever tackled.

Wetting the hair for the purpose of "slicking" it or combing it, is about as bad a thing as could be done; for the moisture sets up a sort of rancid fermentation in the natural oil of the scalp, giving the well-known sour smell to hair that is combed instead of brushed, and furnishing a splendid soil for germs and bugs of all sorts to breed in.

No party felt more confidence at the tendency of this new intellectual fermentation than the Utilitarians. They had a definite, coherent, logical creed. Every step which increased the freedom of discussion increased the influence of the truth. Their doctrines were the truth, if not the whole truth. Once allow them to get a fulcrum and they would move the world.

In works on fermentation the reader will often find those confusions against which we are now attempting to guard him.

Without pausing to consider the somewhat puerile theories of Vitruvius, or the myths which testify to the importance attached to fire by primeval man, we are at liberty to suppose that a conflagration caused by lightning or by the spontaneous combustion of vegetable materials in a state of fermentation, or other similar phenomena, made known to man the power of fire, and the use it might be to him.

They subsist chiefly on the manioc, and, as that can be eaten either raw, roasted, or boiled, as it comes from the ground; or fermented in water, and then roasted or dried after fermentation, and baked or pounded into fine meal; or rasped into meal and cooked as farina; or made into confectionary with butter and sugar, it does not so soon pall upon the palate as one might imagine, when told that it constitutes their principal food.

In case Beer or Ale is backward in working, it is often practised to cast some Flower out of the Dusting Box, or with the Hand over the Top of the Drink, which will become a sort of Crust or Cover to help to keep the Cold out: Others will put in one or two Ounces of powder'd Ginger, which will so heat the Wort as to bring it forward: Others will take a Gallon Stone Bottle and fill it with boiling water, which being well Cork'd, is put into the working Tub, where it will communicate a gradual Heat for some time and forward the fermentation: Others will reserve some raw Wort, which they heat and mix with the rest, but then due Care must be taken that the Pot in which it is heated has no manner of Grease about it lest it impedes, instead of promoting the working, and for this reason some nice Brewers will not suffer a Candle too near the Wort, lest it drop into it.

The season, though wet, was warm; and it is unnecessary to say that the luxuriance of all weeds and unprofitable production was rank and strong, while an unhealthy fermentation pervaded every thing that was destined for food.

Originally, when fermentations were put amongst the class of decompositions by contact-action, it seemed probable, and, in fact, was believed, that every fermentation has its own well- defined equation which never varied.

All wine has passed through the first stage of decay, fermentation, and is liable at any time to continue the course. It may be made with little or no alcohol if it is to be drunk within the year: to ensure a longer lease of life some antiseptic is necessary.
