Then one dart of the long bill captures froggy, and the heron waits for another. You know the red-head, green mallard, canvas-back, and small teal ducks, no doubt, and have seen the flocks of wild geese flying and calling in the sky, or standing like patches of snow as they feed in the marshes or grain-fields.

It is to the roots of the wild celery that the flesh of the canvas-back owes its esteemed flavour, causing it to be in such demand that very often a pair of these ducks will bring three dollars in the markets of New York and Philadelphia.

There is a method at cooking usually called "mudding up," which I have found to preserve the flavor and juiciness of ducks, grouse, etc., better than any other method. I described the method in Forest and Stream more than a year ago, but a brief repetition may not be out of place here. Suppose the bird to be cooked is a mallard, or better still, a canvas-back.

It was as follows: When the canvas-back descends, he must perforce remain some moments under water. It requires time to seize hold of the plant, and pluck it up by the roots. In consequence of this, he usually reaches the surface in a state of half-blindness, holding the luscious morsel in his bill.

For instance, all the nutritive requirements may be met in a ration composed of three food materials, as milk, whole wheat bread, and apples; on the other hand, by one composed of canvas-back duck, truffles, lettuce, celery, cranberries, white bread and butter, cream, coffee, and perhaps a dozen other items.

Then there is the superb "canvas-back," peerless among water-fowl never eaten in perfection out of sight of the sandbanks where he plucks the wild sea-celery; and, in their due season, "soft crabs," and "bay mackerel." They assert that the "cherrystones" are superior to our own Colchester natives in flavor: for reasons before stated, I cared not to contest the point.

I must acknowledge that the canvas-back duck fully deserves all the reputation it has acquired. As to the terrapin, I have not so much to say. The terrapin is a small turtle, found on the shores of Maryland and Virginia, out of which a very rich soup is made. It is cooked with wines and spices, and is served in the shape of a hash, with heaps of little bones mixed through it.

On this root, which is of such a character as to have given the plant, the trivial name of "wild celery," the canvas-back feeds exclusively; for wherever it is not to be found, neither does the bird make its appearance.
