Just before folding the omelet put a tablespoonful of peas in the center, fold, and turn out on a heated platter. Pour the remaining quantity of peas around the omelet, and send at once to the table. If you like, you may pour over, also, a half pint of cream sauce. Put two tablespoonfuls of butter and two chopped onions over hot water until the onion is soft and thoroughly cooked.

PEAS PUDDING. Soak the peas an hour or two before they are boiled; and when nearly done, beat them up with salt and pepper, an egg, and a bit of butter. Tie it up in a cloth, and boil it half an hour. PEAS SOUP. Save the liquor of boiled pork or beef: if too salt, dilute it with water, or use fresh water only, adding the bones of roast beef, a ham or gammon bone, or an anchovy or two.

Does it not produce real advantage in the conveniency and elegance of accommodation, and this all from the exertion of industry? People will tell you, with a melancholy face, how many builders are in gaol. It is plain they are in gaol, not for building; for rents are not fallen. A man gives half a guinea for a dish of green peas.

"Don't you hate this sort of high-pressure talk?" he said, impatiently. "I was just thinking it so brilliant." "Pshaw! conversational fireworks every speaker bent on eclipsing every other speaker. It's an artificial atmosphere, my dear Damon a sort of forcing-house for good things; and I hate forced witticisms, as I hate forced peas. But have you had enough of it?

That was why, when the corn in the orchard was last cultivated in July, I planted cow peas between the rows. The peas made a fair growth in spite of the dry season, and after the corn was cut they furnished fine pasture for the brood sows, that ate the peas and trampled down the vines.

Now, around Good Friday, the talk would be of potato-planting; and again, in proper order, one heard of peas and runner-beans, and so through the summer fruits and plants, to the ripening of plums and apples, and the lifting of potatoes and carrots and parsnips. In all these ways the parish, if not a true village, seemed quite a country place twenty years ago, and its people were country people.

That morning, old John came with our water before breakfast was ready. He also brought us some milk, as he thought we would want it. We considered this a good idea, and agreed with him to bring us a quart a day. "Don't you want some wegetables?" said he. "I've got some nice corn and some tomatoes, and I could bring you cabbage and peas."

On top of the set of home-made shelves that served for his music and his books was a sort of still-life composed of a meerschaum pipe with a broken stem and an empty goblet of pressed glass, standing upon a yellow paper-covered copy of Anatole France's Thais, that had been just like that the last time she was here. She had stuck a bunch of sweet peas she was wearing into that goblet.

No diary exists for 1784 except that of the trip to the Ohio, but from the diary of 1785 we learn that he found time to experiment with plaster of Paris and powdered stone as fertilizers, to sow clover, orchard grass, guinea grass and peas and to borrow a scow with which to raise rich mud from the bed of the Potomac.

"Now as Tom was made for a farmer and nothing but a farmer, he must find land somewhere in a climate that does suit him; so his friends have advised him to try a place in Devonshire or Cornwall, where he may train his myrtles and roses over his roof, and grow green peas for the London markets as late as November.
