There are many points of view from which to study the conditions existing at the close of this period. But for our purpose it will probably suffice to consider some signs of decadence or defects; some hopeful signs.

Ingenious cooks have many ways of "extending the flavor" of meat, that is, of combining a small quantity with other materials to make a large dish, as in meat pies, stews, and similar dishes.
