Up here on the heath it was different from down there, but it was very nice. It was covered with heather-bells and bilberries; they were so large and so sweet; one could mash them with one's foot, so that the heather should be dripping with the red juice.

It seemed to be a sheet of thin but pliable bark from a tree, and in some respects reminded Frank of birch bark, which he had often used in lieu of paper, when in the woods. The juice of some berry had afforded ink; and doubtless the college professor had easily made a pen from a bird's quill.

These bubbles are a form of gas called carbon-dioxide, or carbonic-acid, gas. If, after they appear, the juice is tasted, it will be found to be slightly alcoholic and to have a somewhat sour or acid taste. The gas, the acid, and the alcohol thus produced are the three results of the action of the ferment.

In the tale of "Young Goodman Brown," when Goody Cloyse says, "I was all anointed with the juice of small-age and cinquefoil and wolf's-bane," and the Devil continues, "'Mingled with fine wheat and the fat of a new-born babe, 'Ah, your worship knows the recipe, cried the old lady, cackling aloud."

Raisins are merely the proper variety of grapes suitably dried. Some think that they are dipped in sugar, but this is not the fact. The only sugar is that contained in the juice of the grape, which should be about one fourth sugar. The only raisin grape for general use is the greenish variety called the Muscat.

Spice with cinnamon and cloves, using whole spices. Slice the oranges very thin and quarter the slices. Let it stand overnight in three pints of cold water. Boil all together for two hours and put in glass jars, closing them while hot. If preferred, three pints of currant juice strained may be used instead of the whole fruit. This compote will keep perfectly well after the jar is opened.

I strongly suspect that a friend had privately presented him with a fee to make him attentive to one of the passengers, for he came twice with the most minute directions for finding the Dominion Line office, at Portland. Still his conscience was unsatisfied, for finally he came with the offer of a tumbler full of something he called pure apple juice.

For baked almond puddings, beat a quarter of a pound of sweet and a few bitter almonds with a little wine, the yolks of six eggs, the peel of two lemons grated, six ounces of butter, nearly a quart of cream, and the juice of one lemon. When well mixed, bake it half an hour, with paste round the dish, and serve it with pudding sauce.

150. =Baked Beets.= Clean eight smooth beets with a soft cloth or brush; bake them in a moderate oven about one hour; rub off the skin, baste them with butter and lemon juice, return them to the oven for five minutes, and serve them hot.

All these incisions conduct the milky juice towards one point, where the vase of clay is placed, in which the caoutchouc is to be deposited. We saw the Indians of Carichana operate nearly in the same manner.
