A Bread-and-Olive culture results, familiar to all visitors to Mediterranean lands. In the deciduous forests of South-Central Europe there is grass in the clearings, and milk enough; but goats and sheep are restricted, as the undergrowth becomes deeper and denser, and the prime giver of fats is the forest-bred pig: in a land rolling with ham and sausages we reach the Bread-and-Bacon culture.

There had to be, in other words, a constant bringing in of enough wheat and flour to supply three fourths of the bread-needs of the whole country, and another large fraction of the necessary fats and milk and rice and beans and other staples. This was the ravitaillement.

Animal or vegetable oils or fats are composed of fatty acids in combination with glycerine, and these, under the influence of high-pressure steam, are decomposed or dissociated, the fatty acids being liberated from the glycerine, leaving the former to act upon or corrode the iron of the cylinder. But here their objectionable influence does not end.

Fats also have the great advantage, like the starches, of keeping well for long periods, especially after they have been melted and sterilized by boiling, or "rendering," as in the case of lard, or have had moderate amounts of salt added to them, as in butter.

There was certainly one difficulty which the tailor had NOT to encounter in the progress of fats courtship: the field was his own, he had not a rival to dispute his claim.
