"What makes me the more outrageous is, that I got fairly drawn into the vortex, and before the third day was expired, I was as deep in mud and politics as ever a moderate gentleman would wish to be; and I drank beer with the multitude; and I talked hand-bill fashion with the demagogues; and I shook hands with the mob, whom my heart abhorreth.

Teetotalers were unknown, and Isaac himself drank his beer freely, and a glass of spirits, like anybody else, on occasion. She had been used for years to fetch his beer from the public, and she had been careful. But there were signs Oh! if she could only think of some way of putting it back this thirty odd pounds. She held her head between her hands, thinking and thinking.

I was a good deal annoyed by one little maid, who when I told her, over our nursery tea, that my father had been the most honourable of men, began to cry about her father, who was dead too, and said he was "just the same; for in the one and twenty years he kept a public-house, he never put so much as a pinch of salt into the beer, nor even a gill of water, unless it was in the evening at fair-time, when the only way to keep the men from fighting was to give them their liquor so that it could not do them much harm."

At sea, when the food was mostly salt, it must certainly have been a great dainty. The "allowance" or ration to the men was as follows : Each man and boy received one pound of bread or biscuit daily, with a gallon of beer. The beer was served out four times daily, a quart at a time, in the morning, at dinner, in the afternoon, and at supper.

Although they are of no importance as aids in the common fermentative processes, they are not infrequently the cause of much trouble. In the fermentation of malt to produce beer, or grape juice to produce wine, it is the desire of the brewer and vintner to have this fermentation produced by pure yeasts, unmixed with bacteria. If the yeast is pure the fermentation is uniform and successful.

His mustache hung down limp on both sides in the Turkish style, and his stomach was not unlike a large beer barrel. And yet he tried to make the world believe that he was such an amiable man that the woman was yet to be born who could resist him, be she never so young, beautiful, and accomplished.

Francis Ledsam sat where the sunlight fell upon his strong, forceful face, shone, too, upon the table with its simple but pleasant appointments, upon the tankard of beer by his side, upon the plate of roast beef to which he was already doing ample justice. He laughed with the easy confidence of a man awakened from some haunting nightmare, relieved to find his feet once more firm upon the ground.

When the yeast plant is set to work in a tub or vat of grape juice, it attacks the fruit sugar contained in the juice, and splits it up into alcohol and carbon dioxid, so that the juice becomes bubbly and frothy from the gas. When from seven to fifteen per cent of alcohol has been produced, the liquid is called wine. Beer, Ale, and Cider.

"You know what I mean," said his daughter, "standing outside and sending Bill Russell in to get you beer. That's what I mean." Mr. Vickers turned, and with a little dramatic start intimated that he had caught sight of Mr. Russell for the first time that evening. Mr. Russell himself sought to improve the occasion. "Wish I may die " he began, solemnly.

The explanation that the one drink is coarse and the other fine does not meet the case. People drink beer out of glass, and the finer the glass the better they like it. But there is something fundamentally discordant between beer and porcelain. It is not, I imagine, that porcelain actually affects the taste or quality of the liquor.
