Having propped Florence up with cushions on the sofa, which was already wheeled into a warm corner for her greater comfort, the Captain pursued his cooking with extraordinary skill, making hot gravy in a second little saucepan, boiling a handful of potatoes in a third, never forgetting the egg-sauce in the first, and making an impartial round of basting and stirring with the most useful of spoons every minute.

The gravy for all roast poultry is made in this way. Serve with cranberry sauce or jelly. Stuff and truss as with turkeys, and to a pair of chickens weighing two and a half pounds each, allow one hour to roast, basting often, and making a gravy as in preceding receipt. Boil as in rule for turkeys.

Carmela stirred her tea thoughtfully. "Ah!" she said. "How nice these spoons are. I wish you would tell me who gave them to you." She helped herself to another cake. "Gemma is difficult, and we shall all be glad when September comes and she is safely married. She is lazy. You have seen us of a morning, cutting out, basting, stitching at her wedding clothes, while she sits with her hands folded.

Listen to me when I am talking to you. Who washed these glasses? What a shame! You are as afraid of water as a mad-dog. And you! what are you staring at that chicken for, instead of basting it? If you let it burn you shall go to bed without any supper.

Take the tablecloth in both hands, and roll the strudel, over and over, holding the cloth high, and the strudel will almost roll itself. Grease a baking-pan, hold to the edge of the cloth, and roll the strudel in. Bake brown, basting often with fat or oil. APPLE STRUDEL, No. 2 Into a large mixing bowl place one and one-half cups of flour and one-quarter teaspoon of salt.

If the oven is in not too hot, the beef requires no basting. When it is at the proper temperature and the cooking is going all right, the meat will keep up a gentle sputtering in the pan. A roast of beef should never be washed but carefully wiped off with a damp cloth. When meal is done, take it from the oven, cut off the outside slices, then salt and pepper well.

"If you tender me your grief for your insolence," he suggested, with truculent condescension, "you will save yourself a basting." Evander laughed outright, the blithest laugh that Halfman had yet heard pass from his Puritan lips. "I must deny you, pomposity," he answered, gayly. "It were pity to postpone a pleasure." "You are in the right," commented Halfman.

The following day, skin and bake in the oven, having covered the ham well with brown sugar, basting at intervals with cider. When it is well baked, take it out of the oven and baste another ten to twenty minutes in the pan on top of the stove. The sugar crust should be quite brown and crisp when done. To be thoroughly appreciated a ham should be carved on the table, by a pretty woman.

Pour it boiling hot over the meat, and let it lie in the pickle two weeks, turning it two or three times every day, and basting or washing it with the liquid. Then take out the hams, rub them with bran and smoke them for a fortnight. When done, keep them in a barrel of wood ashes. In cooking these hams simmer them slowly for seven or eight hours.

Fat meat requires more roasting than lean, and meat that has been frozen will take nearly double the usual time. Basting the meat continually with flour and water is a bad practice, as it gives it a coddled parboiled appearance, and diminishes the flavour. These directions for roasting beef will apply equally to mutton. Pickles are generally eaten with roast beef.
